PhD Research Project in Microbiome Science

Description

Dawn Meats Group is pleased to be able to offer a unique opportunity to aspiring PhD students.

The group is partnering with the University of Naples Federico II (UNINA) as part of the Crescendo Transdisciplinary Doctoral Programme in Microbiome Science to offer a fully funded research PhD in the field of food microbiomes. The successful applicant’s research project will develop “Microbiome mapping in the meat food chain from farm-to-fork”. This will focus on mapping the microbiome in the meat food chain, from primary production to retail, understanding how the microbiome of the environment affects shelf-life, quality and safety and how processing conditions may modulate microbial spoilage dynamics.

EU FUNDED DOCTORAL PROGRAMME:

This project has received funding from the European Union’s Horizon 2020 research and innovation programme under the Marie Skłodowska-Curie programme.

DESCRIPTION OF DOCTORAL PROGRAMME:

CRESCENDO is a Transdisciplinary Doctoral Program managed by the University of Naples Federico II (UNINA) through its Task Force on Microbiome Studies that combines facilities and experience of more than 150 Academic scientists from 14 different UNINA Departments.

The successful applicant will be mentored by academic supervisor Dr Francesca De Filippis, Assistant Professor of Microbiology at UNINA and internationally recognised expert in microbiomes and food microbiology, who will lead the training in the microbiome field and individual research. This will be complemented by a secondment at Dawn Meats Group in the UK or Ireland, where the group’s extensive beef and lamb processing facilities provide a significant industrial placement opportunity for the industrial sampling and industrial application area of the research project. The research project also provides an opportunity to work with Professor Avelino Alvarez-Ordónez in the department of Food Hygiene and Technology at the University of Leon in Spain.
